Indie Vegan Cheesecake

?Indie Vegan Cheesecake ?

Impress your guests this Christmas with this vegan showstopper. It’s super tasty, super creamy and ALL natural!

Recipe below:

For the base:
30g coconut oil, plus extra for greasing
100g blanched almonds
100g soft pitted dates
2 bags of Indie Bay Dark Choc Bites

For the topping:
300g cashew nuts
2 ½ tbsp agave syrup
50g coconut oil
150ml almond milk
2 lemons, zested and juiced
A handful of berries
1 Pack Dark choc bites

Method:

STEP 1
Soak cashews in a bowl of boiling hot water for 1hour.
Whizz the ingredients in a food processor. Grease a 23cm tart tin with coconut oil, press the mix into the base and pop in the fridge for 30 mins.

STEP 2
Drain cashews and tip into the food processor. Add all the remaining topping ingredients and whizz until smooth. Spoon onto the base and put in the fridge to set completely for 2hours.

The news is finally out. Our glorious award winning THINS have reached the Morrisons shelves! It is quite surreal to think that 5 years ago, no one knew who we were and that now we are officially available from every corner of the country… how about that?! ?

Indie Bay Pretzel Sandwich

 

Here we have the Indie Bay Pretzel Sandwich. It’s a sweet and salty mash-up containing four of our favourite things – banana, chocolate, peanut butter and our Pretzel Thins. ?  They are perfect for an after school activity or as a quick yummy canape! Find the recipe below:

 

Ingredients:

 

Bananas

1/2 cup of peanut butter

3/4 cup of melted chocolate

Indie Bay Lightly Salted Pretzel THINS

 

Method:

 

  1. Lay out all the pretzels onto a freezer safe tray
  2. Add a slice of banana and 1 tsp of peanut butter on top of every pretzel
  3. Add another pretzel on top and freeze for 10 mins
  4. Remove from fridge. Melt the chocolate
  5. Dip half the pretzel in the melted chocolate and return to the tray
  6. Freeze for another 20 mins and enjoy!

The Indie Bay Gang take on the Orchards ?

Indies, are you ready for some wholesomeness?

 

The gang of the pretzel gods met up with the awesome guys over at The Orchard Project. The pretzel met the apple…

Their mission is to bring orchards into the heart of urban communities.

They are the only national charity dedicated to the creation, restoration and celebration of community orchards.

Their aim is that every household in the UK’s town and cities be within walking distance of a productive, well-cared-for, community-run orchard.

We had so much fun picking the apples, chomping on them, cider tasting but most importantly connecting with one another. After a long year of lockdown, it was so amazing to be out with such a fabulous team and bonding in and amongst nature. It was a great feeling to help preserve London’s green space and make use of surplus fruit that may otherwise go to waste.

Our host Elizabeth was amazing and her knowledge on apples was outstanding, I call her the apple whiz! The fact that stood out for me most is that there are 3000 varieties of apples which means you could eat a different apple every day for 8.5 years! I only thought there were Pink Ladies and Galas but little did I know.

At the end of the day, we all went round and said one thing we were grateful for. IT was lovely to reflect on our own lives and also our team mates’ lives.

I was grateful for my team and the fabulous nature that was surrounding us.

Blue Indie Piña Colada

It wouldn’t be summer without some great snacks and a show stopper of a cocktail recipe, right?

Are you hosting a cocktail party or in need of a super fun weekend activity? Well look no further, I’ve got you covered. Get your whipped cream and cherries out the fridge and let’s go!

I really recommend listening to ‘Escape (The Piña Colada Song) by Rupert Holmes, but let’s make sure you don’t get caught in the rain, it might dilute your cocktail!?

Don’t forget to munch on some pretzel bites as you go. ?

Ingredients:
– 30ml Rum
– 30ml Pineapple Juice
– 1 tablespoon of coconut cream (add more if desired)
– A splash of Blue Curaçao Syrup
– Whipped cream and cherries for garnish

Method:
1. Rim the edge of a glass with coconut shavings, and set aside.
2. In a blender with ice, combine rum, pineapple juice, and coconut cream. Blend thoroughly until smooth enough to drink.
3. Pour the blended mix into the rimmed glass and gently pour some blue curaçao syrup around the edge (warning: this could get messy).
4. Garnish with whipped cream and top with a cherry. Best served with a bowl of our Pretzels.

Beetroot & Blue Cheese Salad – Indie Bay style

We have teamed up with Lucy’s Dressings and YUMCHI to bring you a crunchy, zesty and all round glorious salad, perfect for any occasion! It is quick to rustle up and dangerously moreish.

 

Top tip: spread some blue cheese onto our Barbeque Pretzel Thins for the ultimate combo. It really does add some competition to the cheese and cracker game. ?

 

Ingredients:
1 handful Mixed Leaves
5 Beetroots, cooked and peeled
100g crumbled Feta or Blue Cheese (vegan if desired)
100g YUMCHI Napa Cabbage Kimchi
1/2 pouch Indie Bay Barbeque Pretzel Thins
1/2 pouch Indie Bay Pretzel Superseeds bites
Lucy’s Zesty Lemon & Caper Dressing

 

Method:
1. Wash the mixed leave and slice the beetroot into quarters.
2. Assemble the ingredients on a large serving plate and drizzle with dressing
3. Enjoy as a quick WFH lunch, weeknight dinner or double up for a large sharing salad for friends!

Hello hello hello. It is a VERY exciting and colourful day today! IT’S PRIDE DAY!!

We see you, we hear you, we appreciate you and we LOVE you.?

? This pride month, we have taken time to reflect, talk and re-evaluate. The topic of inclusivity has been widely spoken about at length within Indie Bay Snacks HQ and with those connected to us. There’s always room for improvement and we’re here to learn as much as we possibly can to better/educate ourselves and our brand; we do not only want to grow and learn as individuals but also together as a workplace.

? Here are a few things we have revisited / discussed:

  1. Our handbook and job descriptions. We have revised these to make sure that it is extremely obvious that we are LGBT welcoming and that we do NOT tolerate discrimination in our workplace.
  2. Avoiding binary-gendered language during meetings or general conversation.
  3. We have been looking into Equal Operation’s training to educate us even further on the diversity of gender and sexual orientation.
  4. We are providing samples for this years PinkNews event. PinkNews is the most popular LGBT+ publication in the world, attracting up to 50 million unique users per month across their website and social media platforms! We are SO thrilled to be supporting them ?

? Even though we are a small team, we are VERY mighty and will do all we can to fight against discrimination and support the LGBT community.

The Orchard Project

 

As you’re all aware, we announced our partnership with 1% For The Planet a few months ago and we are so excited to give you all updates on how we’re getting on!

? Here is a little recap on what 1% For The Planet is and WHY it is so blooming amazing: the goal is to support fantastic environmental businesses, to help them conquer the world and keep our environment safe.

SO – with that in mind, we thought a great place to start would be TREES! I mean, after all, they’re the reason we’re still alive and breathing! We are SO excited to announce that we’ve partnered with the amazing team over at The Orchard Project and have recently sent off our donation.

? Our contribution will help with planting seven community orchards in London this year. They will be involving schools, housing estates and the wider local communities to design, plant and care for their own orchard. The Orchard Project brings people together to support them in creating change in their local environment alongside improving health and wellbeing by connecting people with their neighbours and most importantly, with nature.

? But we can’t do this without YOU. So thank you to all you lovely snackers, as it’s your Indie Bay purchases that help make amazing things happen! 1% of all your orders go towards The Orchard Project, how nifty is that?!

The excitement doesn’t stop there. In September, the Indie Bay squad will be visiting Mill Hill to go apple picking!
